Turkey & Stuffing Sausage rolls

Try these amazing festive Turkey Sausage Rolls from Chef Richard Hunt.

2 x 500gm Pack Puff or Shortcrust Pastry

1 x Pack sage and Onion stuffing mix

2 x 500gm Minced turkey

1 x 500gm quality pork sausage meat

250gm Finely chopped Shallots

50gm Unsalted butter

Salt and black pepper

2 eggs beaten with a pinch of salt for egg wash

1tsp Black onion seeds

Method

Pre heat your oven to 180c, place your baking tray into the oven at this time, it will help to cook the bottom of the pastry

Sweat the shallots in the butter until very soft and beginning to slightly caramelise, leave to cool

In an additional bowl mix the turkey, sausage meat, stuffing mix and cooled shallots

Mix well but do not over mix

Roll out the pastry until 3mm thick approximately

Form a sausage of your turkey mix about 50mm wide, and place on the pastry, glaze the pastry so when you create the sausage roll the pastry sticks together.

Roll into a sausage roll shape, glaze with the egg wash and onion seeds and cut into whatever size you would like.

Remove the tray from the oven and place the sausage rolls on the tray 50mm apart

Bake for 20-30 minutes depending on size until the pastry is nicely golden and crisp and the meat inside is thoroughly cooked (Use a probe if you are unsure of this)

Remove from the oven and cool on a wire tray

These sausage rolls can be frozen before after baking.
